If you're fermenting just cauliflower do you need to put it in the refrigerator for 11 weeks as well or is that just for the Brussels sprouts?

Cauliflower is also a brassica vegetable, so we would encourage you to give it the full 11 weeks. I do know of people who eat it after 1 week on the counter, but that is not long enough for it to be completely finished.

Potatoes can be fermented 2-3 days on the countertop in 2% Brine and then cooked. If you ferment them too long they will not brown nicely when fried because all of the sugars are used up.
